18.1 How to make beef sauce

To make the most delicious beef sauce, it has to go through many stages.

First  , the fish must be cleaned. Depending on the area, the fish can be removed or kept. Next, people will soak the fish with salt until the fish swells up, then begin to dry the fish, marinate it with spices like sugar, pepper, garlic, chili … to absorb and then use a heavy object to press the juice. the fish leaked out. 

Then people wash the fish with salt water and put them in salted crockery in the ratio of one fish, half cold rice, one salt. The last step is to use bamboo sticks to tighten the jar and keep it for about 4 to 6 months until it becomes fish sauce.
