Ant Eggs – Yen Bai | Famous specialty of Yen Bai Province

When the sweltering heat of March comes, Northwestern men go to the forest to collect ant eggs. From these ingredients, they together create countless attractive dishes. The dish with the seemingly difficult name at first became popular and became a  specialty of Yen Bai .

The big ant nests like mortar hats are gently knocked to dislodge the ants and then split in half to get eggs. People usually do not remove all the eggs, but leave some for the ants to reproduce.
